We have done a 1 week vacation nearly every year in the Fall since my son started school 5 years ago. Just talk to the teacher and the school, they probably have a program for this. We get the week's work form the teacher ahead of time, sign a "contract" to do the work and my son does his school work during the vacation and turns it in when we return. He gets credit for the work and none of the days count as absences. You just need to plan ahead, the teachers like a couple of weeks to pull the planned work together.
