Only he could answer that, but there is an obvious answer: because it's the only system yet whereby people seem to be able to live free and prosper. Therefore, Mr. Bush, as a freedom loving Christian, believes that he can leave the World better than he found it by helping to provide the gift of democracy to a region that, historically, hasn't had it. Ataturk comes to mind since he abolished the Ottoman Caliphate and installed (and enforced!) the principles of democracy and secularism. (Maybe a bit like Musharraf?) IMO, the difference between Ataturk and Bush is that Ataturk did his work from the inside whereas Bush is from the outside.
