The Final Cut is basically the version Ridley Scott originally intended to release. He didn't change much - remastered, 5.1 surround, removed all visible wires, etc. All the original effects are very much intact, just prettier.
About the biggest change was to Joanna Gleason's chase scene. He actually brought her back in and had her redo some of the face shots, then mapped it onto the original model's footage so that it wasn't obvious that they were using a stunt double. The result is quite amazing actually.
