The real question is what's "healthy".  My personal belief is that
simple carbs and saturated fats (and trans) work like a teeter-toter:
when one goes up, the other must go down (ie eskimos eat all whale
blubber - sat fat - and have the lowest heart disease rates of any
group)

Insulin spikes w/o activity are the killer.

A Phelps type never slows down enough to store fat and uses his spikes
for swimming so essentially his carbs are ALWAYS rock bottom.

Thus he can probably eat damn thing he wants with no ill effects.
