The real question is what's "healthy". My personal belief is that simple carbs and saturated fats (and trans) work like a teeter-toter: when one goes up, the other must go down (ie eskimos eat all whale blubber - sat fat - and have the lowest heart disease rates of any group) Insulin spikes w/o activity are the killer. A Phelps type never slows down enough to store fat and uses his spikes for swimming so essentially his carbs are ALWAYS rock bottom.
