all I know is that the employers say they hire illegals because Americans don't want the work. There is probably an unspoken "at those wages" in there, sure. This leads to the question of how much more people are willing to pay for produce.
But my main point here is that -- based on my little bit of anecdotal evidence in central California -- this narrative appears to be at least somewhat true. I realize that your anecdotal evidence says something else. But here's an interesting point I heard made once -- if you are Mexican and let's say a waiter, or anyone with no specially in-demand skills, your wait for a legal visa can be up to twenty years. Not much help when your kids are starving. I can say this because I am Canadian, and at the time I got my green card, had no specially in-demand skills.In fact I have had immigration officers say to me, oh, don't worry, we are not concerned about immigrants like you.
