Jelly is tightly strained -- before jelling it has the consistency of juice
concentrate. (no, 'Gel, I don't mean before you concentrate)
Jam is loosely strained -- it's like a really thin applesauce and may
include small seeds ie blackberry seeds or pulp similar to orange juice
pulp.
Preserves are basically jam or jelly with chunks of the actual fruit thrown
in.
At least that's how I understand it.
