My thoughts on the ones I have seen:

Fallen - LOVED IT
7 - great flick!
12 Monkeys - another good one :)
Pulp Fiction- classic
Heat - great to see DeNiro and Pacino face off
Casino - enjoyed it... Sharon Stone was really good in this one

A few more I would add:

Resevoir Dogs
Matrix (Part 1)
Lord of the Rings Trilogy
Stir of Echoes ( I know... most won't agree with this, but it did something to me)
Devil in a Blue Dress
Ricochet
Billy Madison
Happy Gilmore
Waterboy
Black Sheep
Tommy Boy

If you liked that check out Spun and Rules of Attraction.  It's funny that
this came up,  today we were having a conversation about what we thought
some great movies  were, let's see how many I can remember now.

Taxi Driver
Dr. Strangelove
Clockwork Orange
Fallen
7
12 Monkeys
True Romance
Pulp Fiction
Clerks
Mall Rats
The Sultan Sea (just saw this over the weekend on HBO, was a really good
movie)
Heat
Goodfellas
Casino

There were more.  I will see if I can't get something together out of my
lunch group and post it on my blog.

speaking of pi...

saw Requiem for a Dream the other day (another Aronofsky film).  Incredibly
disturbing film, but worth watching.  Ellen Burstyn's performance (for which
she was nominated for a Best Actress Oscar...but lost to Julia's Erin
Brokovich) was absolutely outstanding.
