Pretty much everything is installed into /opt/coldfusionmx7, you should 
just be able to delete or rename that directory and then run the 
installer again.

The only files placed outside of that area are the apache module, which 
shouldn't need to be removed, and the init scripts under /etc/rc.d, 
which can also stay.
