Well, I discovered this about 30 seconds before Daryl sent this message.
Fieldnames is just that; a simple list of the names of the fields. When I
try the last two suggestions using the default variable name for the form --
#form# -- then I get what I wanted. In fact CFDUMP even builds a groovy
little table around the results.

I'm really looking forward to the day when it's no longer true that the
simple errors are the ones most likely to jump up and bite my hiney.

Fieldnames is not a struct.  Form is.

isStruct(Form) is "true".

Also, stop using evaluate or structFind(), use array syntax!
