I caught this thread 1/2 way but thought I'd chime in.  I'm using iMail
server and am very happy with it.  It has a range of security features and
the user manual (downloadable in PDF format) is great.

My recommendation would be that you download the PDF file and read through
it a little but.  There's a whole chapter there on security.
