You might set a hidden form variable whose value is the IP of the submitting
visitor. If you find the spammer is using one or just a few IPs each time,
you could catch those on the result page and stop the form processing.

That's what I do for my 404 pages, when a spammer/hacker is looking for
non-existent scripts on my site, to prevent my in box from being flooded
with irrelevant 404 alerts.
