You are right on. There are a bunch of bunch of manual configuration steps to 
deal with, but in all fairness there are tools that automate most of it. I 
would be happy to send you my working baseline configuration files if you want 
to try it. Once you get the baseline configuration running, there is a very 
nice little GUI tool that allows you to admin the server- add domains, add 
email addresses, etc.
