You really want to use Ben Forta's article here:

This is the java API called XPAAJ, which will let you set form fields
inside an existing PDF.

Thanks Rich.  We actually have a certificate that will be put into a
pdf.  We will then place the customer's name and other information on
that pdf when needed.
