I wholeheartedly agree with Pablo.

Create an estimate based on an hourly rate;  let them know it's an estimate 
and that if you go over the estimated hours, you'll bill them for the 
additonal hours at the hourly rate.

Get 1/3 or 1/2 of your estimate up front.  If they can't do that, skip it, 
unless you know them VERY well and are sure they'll pay up.

Be very up front and honest about how many hours you're putting in on their 
project, and keep them abreast of the progress and how many hours you've 
logged.  This creates a feeling of good will so you'll be more likely to get 
paid in a timely fashion.
