We haven't really tried it, but if you install a copy of Contribute and then setup the web site to be controlled by Contribute, you can enable versions of individual files.
Then, you enable Contribute compatibility within DW. From what I hear DW will then leave a specified number of versions of a file on the server. Again, I'm not positive on this, but we may head this way for the rebuild of our primary web site.
