I am assuming you are referring to CF Server, not studio. Mac OS X is Unix based. I'm not sure if the *nix version of Cold Fusion has been tested, but there are people running *nix versions of MySQL, Apache, PhP, etc. on Mac OS X so I don't see why it wouldn't be possible...
