Taco, Without testing this and from what I have read, Angus showed a valid link that makes perfect sense. The problem is that it appears the order matters as to which is displayed as a default, so if there is one missing it would mean that google as mentioned in the article / comments will display nothing.
As far as HTML and SPAM goes, it would not matter at all. The rules are based on a learning algorithm, and the logic you hold would fail for the simple reason that HTML is still in the email and if there was something in that section that would flag it as spam it will still flag it as spam regardless of displaying in HTML or TEXT.
