I have been using Thunderbird under Win10 since the fall of 2016 and
do not have your problem. I display From and Recipient (Expéditeur and
Destinataire for me).

  Have you checked the source of emails to see what the From field looks
like? v.g.

Date: Tue, 14 May 2019 15:00:21 +0100
From: 'Mike Day' via Chat <[email protected]>

  Then in the From column, I see 'Mike Day' via Chat.

  See also on the Contact tab of the Correspondent record the option
regarding what to display.
