You can just run a wire with an inline fuse from the battery or junction block into the cabin, and another wire from there to the starter, with a simple switch in between. You'll have to have your key in the run position and then hit the switch for power to the solenoid. I actually have my El Camino set up that way. A hidden switch also makes the car a little bit harder to steal, especially since the ignition lock cylinders in the 1969-72 cars are so easy to beat.
