1/2 ORANGE STRUSSEL TOPPED MUFFINS
 
Cut a large orange in 1/2.
Remove the orange pulp saving to serve with the muffins.
 
FOR MUFFINS:
Mix an ORANGE FLAVORED MUFFIN MIX as directed.
Pour/spoon the muffin mix into the orange 1/2's.
Add to a little over 1/2 way full, allowing for muffin to rise.
 
FOR STRUSSEL:
BLM, brown sugar, cinnamon, chopped nuts, small amount of raisins 
 & butter(margarine)
Mix amounts for a crumbly mixture.
Add STRUSSEL to top of muffin mix in the oranges.
 
Wrap each orange 1/2 in foil leaving the top open.
Cook over indirect heat over camp fire.*
When muffin is done, remove from fire.
Remove the foil place on plate. 
Cut a slit in the top of each muffin and add some butter.
 
FOR ORANGE PULP
Slice the pulp. Place into small mixing bowl.
Add sugar to taste depending on how sweet the pulp is.
Mix in with the sugar and oranges a small amount of cinnamon.
 
TO SERVE
Place the muffins on plate. Cut a slit in the top of each and add butter.
Serve with the orange pulp. 
 
*These were great over a fire, but the next time I did them I didn't have a 
fire so baked them on a baking sheet in the oven. 
I baked them at the temp on the muffin package.
These are very tasty!!!! And so easy of a way for the kids to have something 
fun for breakfast.
 
For a complete breakfast. 
Scoop out extra oranges where you have a 1/2 orange for each person. Saving the 
pulp as above. 
Wrap each orange 1/2 in foil leaving the top open. 
Crack 1-2 eggs in the orange 1/2's. Cook these in the same way you do the 
muffins, to the desired doneness. 
I found out about doing this because i had 2 orange 1/2's left over from the 
muffins. 
My DH said just put a couple of eggs in the 1/2's and cook them and see how 
they turn out, he suggested sprinkling them with cinnamon.....
Told him NO!
The eggs were good this way. But got done before the muffins.
