Thanks all for the great info and suggestions. I set the interfaces to auto/auto and there were *almost* no errors overnight.

We had cases in the past where devices got reloaded and when came back didn't negotiate properly (most often stuck in half-duplex). Those issues are sometimes quite difficult to spot.
