Save as a .enc file.

I use Etherpeek and can view an Etherpeek file on Sniffer Pro saving in
Sniffer format but with the .enc extension.

You can also download Etherhelp from http://www.aggroup.com for free and it
is a remote sniffer that will only allow you to "sniff" packets but doesn't
have the decode ability in it.

I set this up on a couple of machines in different spots and just "harvest"
the packet files once in a while and view them using my Full version of
Etherpeek and/or Sniffer Pro.

This is more then "flexable" for what you need.
They have versions both for Windows and Macintosh.
