I have asked the same questions to CCIEs and the consensus is:

1. IOS version is the latest stable release - they probably don't change it
every day.

2.You will have a laptop with the documentation CD - use that and forget about
the paper version (access is too slow). Cut and paste into your configs.
Realistically, most CCIEs have told me that the commands should flow out of
your fingertips for the most part. So you won't have the time to be looking up
all the answers. Just the few unusual items you may be unfamiliar with.

3.I have been told the actual router equipment varies from lab to lab and that
the main focus of the test is the IOS, not the equipment.
