Think in terms of interfaces.

A frame switch (4 serials)
3 routers with serials (so you can do full mesh)
2 routers with ethernet
2 routers with isdn
2 routers with token ring

to me the above is a good basic lab that covers the basic interfaces.
Some ways at accomplishing it:

frame switch:  AGS+, 4000, 2520, 2521 (pick one)
2501 and 2503 (gives you both ethernets and 1 isdn, 2 serials)
2502 and 2504 (gives you both tr, 2nd isdn, 2 serials)

thats a good basic lab
