Stuart,
Dialer Profiles will allow you to define pap as your method of
authentication as well as manually specify the username of the
calling/called device ("ppp pap sent-username"). The only reference to the
clear-text password is made from the defined local user database(which is
already clear text). This is of course assuming that you're not using
tacacs+ or radius for authentication.
