You should be able to do a 'show interface' command. That will show you each VLAN and each interface along with information about their traffic (by default over the last 5 minutes). But that should be fine for what you're doing. Whenever you notice timeouts, you should be able to do this command and check the txload, rxload, and examine the output for errors.
