Off the top of my head, I believe that all the switches you mentioned, with the exception of the 5002, are fixed configuration switches. You should check out the Cisco website for the main differences because they are too numerous to list here.
In my opinion, get the 5002 (or 5000) because it is modular, which means you can upgrade the supervisor engine or any of the modules if you want and it is also one of the switches used in the CCIE lab. However, it is probably more expensive than the others. I think that the 2926T has modules but I don't know if you can upgrade them at this time (not sure about this). I guess it all boils down to what you can spend.
