Josh, Look hard at ultrasonic level sensors that mount in the top of the tank. Pricey but possibly worth it.
Also, I seem to recall some sensors that mount on the outside of plastic tanks. Maybe 3-4 per tank. They are contactless. That is, they don't make contact with the liquid so they are not susceptible to scale build up, etc. A Hunter I work on occasionally has some. They seem to work OK.
