Apps can launch each other by using URLs as demonstrated in the LaunchMe sample app. Other than that, there is no way to exchange information in current shipping iPhone software.

3) Is there any way for application X to examine the pasteboard from a copy event in application Y?

NDA. I encourage you to sign up for the iPhone Developer Program.
