I have managed it as following:
I have made the following entries in sitemap:
<map:match pattern="table.xls">
<map:generate type="serverpages"
src="docs/samples/xsp/table.xsp"/>
<map:transform src="stylesheets/excel.xsl"/>
<map:serialize type="html2xls"/>
</map:match>
<map:serializer name="html2xls" mime-type="application/vnd.ms-excel"
src="org.apache.cocoon.serialization.HTMLSerializer"/>
and it works!!!
ONE MORE QUESTION:
How can I tell Cocoon2 to do a few steps, e.g.
1)XSP + XSL to a TEX-Document, then
2)TEX-Document to PDF file?

One possibility: you can output the result as .csv (comma delimited)
format. Excel can read that.
Just output the result as text, with an extension of .csv, and when you
write the result, put commas between the columns.
