After spending quite a bit of time looking around I started using Kattare (www.kattare.com). Their support is fantastic and when I call up they respond to things right away.
I'm not yet running any serious Cocoon-based projects with them at this time but have done some experimental work. Because of this I am not yet in a position to give you a full out recommendation, but I would definitely check them out. Also, their prices are reasonable and you can terminate your contract with them at any time.
