let's call out whats out of the box schema evolution support we have w/ hudi.
Looks like the [section|https://hudi.apache.org/docs/schema_evolution] is
towards the end, and folks bump into schema on read as the first section and
likely think that schema on read is required even to add new cols.
also, lets add an example for easier understanding for newbies.
