### Describe the issue this Pull Request addresses
Some Hudi users uses confluent schema registry service whose dependency like
kafka-avro-serializer is 6.x or 7.x, which causes Hudi schema registry client
failed to deserialize their schemas since metadata field is unexpected.
Therefore, we should upgrade corresponding confluent version accordingly.
### Summary and Changelog
Upgrade confluent version to 7.5.1.
### Impact
Reduce the error when parsing schema from confluent schema registry.

Low.
