Hi Lisa Rose, A good resource is Jutta Mason's 'Cooking With Fire in Public Spaces.' You can find several excerpts from this book on Project for Public Spaces' Urban Parks website, as well as some case studies on the outdoor oven at Dufferin Grove Park in Toronto. (I believe Jutta Mason is with the Friends of Dufferin Grove Park.)
