Here in Toronto there is a wonderful Outdoor Oven Resource written by a women named Jutta Mason called "Cooking with Fire in Public Spaces". It looks at the building, politics and social value of outdoor ovens. It is a small manual and i could get a hold of a copy for you if you are interested.
