Your topics sound quite good, though I am not sure about a whole program on
donation opportunities? We usually do an end of season class, "Putting the
Garden to Bed", which can incorporate Cover Crops. We also do one on Garden
Pests and Invasive Plants - how to identify them and manage them, and we
include a talk of Organic Fertilizers and Amendments.
