I'm not really current on later Macs and OSes, but
could you not run OS 8 or 9 on this thing?  At which
point 640x480 is probably okay.  I run 7.5.5 on a
640x480, on my LC 575.

Speaking of which...

I got my hands on a Quadra 650, but unfortunately the
mainboard was damaged beyond my skills to repair.  But
I did pull the 68040 out of it before tossing it. 
IIRC, the two chips are pin-compatible, so I can just
drop the 68040 into the LC040 socket on my LC
575...right?  (I do hope the answer is yes, because I
so want to run Unix on that Mac. :)
