I see Antonio has answered this in more technical detail than I can, but I have added some practical notes about working with these disks and disk images here:

Note that CompUSA.com has Sony 2DD disks. Last time I checked, they still had them.

Also note that System 3.3 Finder 5.4 is not ideal--it was never released as a system disk (it only came with AppleShare)--System 3.2 Finder 5.3 is a better choice, IMHO. When you get an HD 20, then System 4.1 Finder 5.5 becomes a good choice as well.
