Logical security? I don't see any basis for any difference. Physical security? No matter what's in the cable (copper twisted pair, copper coax, or fiber), there would be little difference, i.e. if it's strung on poles, a falling tree would part it, but physical strength would make some difference. Putting the wire/cable underground gives it much better physical security.
