I do not think there is an easy way to sort the list alphabetically.
I don't use Mac/Word 08 but in OpenOffice 3.1 on my linux system when I use the 
file open dialog 
box it presents the file types by "most popular" at the top which is defaulted 
to Open Office documents.

I thought Word 08 defaults to saving in Open Office XML format?
What type of file and extension are you trying to open?

Also, when I use OOo there are several ways to open a file. 
 I can use Recently Documents.
 I can click on File Type or press Alt + T - this presents the files types in a 
window that is a little easier to scroll through.
 Or I can click on the button in the upper left and just type the location and 
filename.
