Tropical Nut Cookies

The added fruit provides the sugar in these cookies. Great for a 
healthy snack.

1 large egg or 1/4 cup refrigerated or frozen egg product, thawed
2 medium ripe bananas, peeled and mashed
1/4 cup drained, crushed pineapple (juice-pack)
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1/3 cup unsweetened flaked coconut
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup macadamia nuts, chopped
 
Preheat oven to 375 degrees F. Line a large baking sheet(s) with 
parchment paper or a baking mat. In a medium bowl combine the egg, 
the bananas, the pineapple and the vanilla. Whisk to blend. Add the 
flour, the coconut, the baking powder and the salt. Mix to blend. 
Stir in the nuts. Drop tablespoonfuls of dough, 2-inches apart, on 
the prepared baking sheet(s). Bake until lightly browned, about 10 - 
12 minutes. Remove from rack and cool on pan(s) for 10 minutes. 
Transfer cookies to a rack and cool completely. Store in a tightly 
covered container. 

Notes:
These cookies get their sweetness from the crushed pineapple and 
banana. There is NO added sugar.
