For 2008 Thanksgiving, I did this for the first time and will do it like this 
every year from now on because it eliminates that last minute mashing potatoes  
while the kitchen is at its  height of insanity! *smile*
It also then eliminates all the potato pot mess too! Last year I served 25 
people and it was the least stressed Thanksgiving yet.

I mashed 10 pounds of white potatoes used about cup of cream with butter made 
several days ahead keeping in my fridge.  Then the morning of Thanksgiving, put 
into my large crock pot on low stirring every hour; first hour stir still cold 
in middle, second hour warmed through could have eaten, but we were not ready 
so stirred put some pats of butter on the top cannot remember if I left it on 
low for another half hour and then turned to warm or put on warm right away. I 
did keep an eye on it just making sure the top was not drying or getting over 
done.  but worked out terrific! 

The crock pot I have is nice enough to pull out and place on the table for 
serving. But could be put into a nice serving dish too.

we smoke and fry turkeys here thus no gravy, so I make turkey stock weeks ahead 
of time from turkey wings or legs, make up the gravy, freeze and then the 
morning of I place that in a small crock for heating.  If having a buffet type 
dinner I leave both crocks next to each other allowing each person to serve up 
themselves, if doing a sit down meal, I just transfer the gravy into gravy 
boats. 

Hope these ideas help a bit to reduce stress a bit during the holidays.
