I know they have low fat and low sodium cream of chicken and cream of mushroom soup. I believe both the low fat and low sodium are actually 98% free of either of those, so you could try using those for a casserole.

I usually just make a white sauce using Smart Balance butter or something like it such as a low fat version of Country Crock. Then I add flour and skim milk and use broth and spices to season it.

This is more work, but you have more control over how much salt and fat your using.

Yes, I agree. Use lean meat like boneless skinless chicken breasts, low sodium chicken broth, and add veggies like carrots, potatoes, onion, celery, etc.

You can use spices like garlic, lemon pepper, sage, rosemary, thyme, or just regular poultry seasoning that doesn't contain salt.

you could do the same with beef, only use low sodium beef broth and mix and match the spices above and just omit salt.

I'll check for some recipes tomorrow morning, but if you just put some chicken breast with some chicken broth and some vegetables in the Crockpot you can hardly go wrong. You could get low sodium chicken broth, or you could also put a turkey breast in. I'll try to send some recipes in the morning.

I have a friend who just had double bypass surgery this past Wednesday. She is going home tomorrow, and some of us would like to prepare meals for her and her husband for a few days. She says "low cholesterol, low sodium-basically, no flavor." I want to do this but am not sure what to prepare. Can anyone suggest something? I'd really like to do a crockpot or casserole if possible.
