GRAPEFRUIT ICE (Ingredients For 10 Servings) Preparation: 15 minutes; total time, 5 hours and 30 minutes. -------------------------------------------------------------------------------- 1 c. water 3/4 c. sugar 3 c. pink grapefruit juice cocktail 2 egg whites In medium saucepan, stir together water and sugar. Cook over low heat, stirring occasionally, until sugar is dissolved. Increase heat to high, and bring to a boil. Reduce heat. Simmer, uncovered, 5 minutes. Stir in grapefruit juice. Pour grapefruit-juice mixture into 13 x 9-inch baking pan. Cover and freeze until mixture is partially frozen, about 3 hours, stirring occasionally. Spoon mixture into large bowl. With electric mixer on medium, beat until grapefruit-juice mixture has a slushy consistency. In small clean bowl, with clean beaters, beat egg whites until soft peaks form. With rubber spatula, gently fold egg whites into grapefruit mixture. Return to pan. Cover and freeze until firm, about 2 hours. To serve, let ice stand at room temperature 10 minutes for easier scooping. Yield: 5 cups.
