Grilled Buffalo Chicken
2 1/2 pounds broiler/fryer chicken
1/3 cup melted butter
2 to 3 tablespoons bottled Louisiana style hot sauce or Tobasco sauce
Paprika
Celery sticks and sliced tomatoes
For Blue Cheese Dressing:
1/2 cup yogurt
1/2 cup sour cream
1 teaspoon granulated sugar
2 tablespoons lemon juice
1 clove garlic, minced or pressed
1/2 cup crumbled Blue cheese
Wash chicken. Pat dry. Cut into serving pieces. Combine the butter and hot
sauce or Tobasco sauce. Brush chicken on all sides with about half the
mixture. Place chicken on preheated barbecue grill or broiler. Grill,
turning every 10 minutes, basting occasionally with the butter/pepper
mixture. Grill chicken about 30 minutes in all, or until chicken is done and
juices run clear when pierced with a fork. Brush cooked chicken with any
remaining sauce. Sprinkle with paprika. Serve with celery and tomatoes and
Blue cheese dressing.
For Blue cheese dressing, combine all ingredients for dressing except Blue
cheese. Add cheese just before serving.
Makes 1 1/2 cups dressing.
Microwave Directions:

2 to 3 tablespoons melted butter
2 to 3 tablespoons bottled Louisiana style hot sauce or Tobasco sauce

Wash chicken. Pat dry. Remove the skin, if desired. Brush with soy sauce.
Mix the melted butter and hot sauce or Tobasco sauce. Brush chicken with the
mixture. Place on a microsafe roasting rack or pan, placing the thicker
parts toward the edges of the pan. Cover with waxed paper. Microwave on high
for 6 minutes, turning chicken after 2 minutes. Let chicken stand, covered,
for about 5 minutes. Brush again with soy sauce. Microwave on high, lightly
covered with waxed paper, for another 6 minutes, or until chicken is done.
The thighs may require longer cooking time. Check for doneness. Juices
should run clear when chicken is pierced with a fork. Roll cooked chicken in
the remaining butter/pepper sauce. Sprinkle with paprika. Serve with celery
and tomatoes and Blue cheese dressing.
Makes 4 servings.
