Dutch Macaroni and Cheese, can freeze ahead 8 oz. (2 cups) uncooked macaroni 1/2 lb. (2 cups) ground boiled ham 1 (3 oz.) pkg. cream cheese 2 tbsp. butter 1/2 tsp. salt Dash of Pepper 1/8 tsp. ground nutmeg 1 1/2 tsp. grated lemon rind 4 eggs, slightly beaten 1 1/2 cups milk
Cook macaroni in boiling salted water 8-10 minutes, or until just tender. Drain; add ground meat, cream cheese, butter, and seasonings to hot macaroni and toss together lightly until cheese and butter are melted. Turn mixture into greased 1 1/2-or 2-quart casserole. Combine eggs and milk; pour over macaroni. Place casserole in pan of warm water and bake in moderate oven (350 degrees F) 35-40 minutes, or until knife inserted near edge comes out clean. DIRECTIONS FOR FREEZING: Combine hot cooked macaroni, meat, cream cheese, butter, salt, and pepper as above; cool and freeze. Thaw before baking; combine eggs, milk, nutmeg, and lemon rind; add to thawed mixture and bake as above.
