Pineapple Pound Cake

Ingredients for Cake as follows:

Preheat Oven to 325 degrees

1/2 cup Vegetable Shortening

1 teaspoon baking powder

1 cup unsalted butter (2 sticks, 8 ounces)

5 large eggs

3 cups confectioners' sugar

4 cups unbleached, all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon

salt

1 can (20 ounces) crushed pineapple in juice, divided

Note:  In All Baking, Recipe Friends, if the recipe calls for

butter, always use unsalted butter...and sweet children, don't

ask me why...it's just that way...I guess we can say that God is

coming to dinner and that's what He said to do...I personally do

not know why...it's just an old baking rule!

Ingredients for Glaze as follows:

2 Tablespoons Butter (1 ounce)

1 cup (8 ounces) crushed pineapple & juice from above

1 cup confectioners'

sugar

Pretty whole cherries with stems

Grease and flour a 10 inch tube or Bundt pan.

Measure out 1 cup of pineapple with its juice; set aside for the

glaze.

Using a large bowl, cream together the shortening, butter,

sugars, salt, and the baking powder until light and fluffy.

Beat in your eggs, one at a time (scraping the sides and the

bottom of  the bowl after each addition).  Add the flour

mixture, mixing until combined.  Stir in the remaining

pineapple, and then pour your batter into your prepared pan.

Bake for 1 1/2 hours, until a tester (toothpick) inserted in the

center of the cake comes out clean.  Remove from the oven and

place the pan on a rack, run a thin, dull blade around the

outside edge to help it loosen up, and cool the cake in the pan

for 20 minutes (no more).  After the 20 minutes, invert the cake

on a very slightly buttered plate and then turn it over once

more so it's right-side-up on a pretty cake plate.

To make the glaze:

Heat the butter in a small saucepan.  Stir in your

confectioners' sugar & reserved pineapple with its juice.  Bring

to a boil, remove from the heat, and pour the mixture over the

top of the cake while it's still warm.  Decorate with some

pretty cherries that have the stems on them.
