Here is a recipe I personally love! Aloha Chicken Ingredients 1 small can (8 oz.) unsweetened pineapple slices, packed in juice 1 teaspoon chopped garlic 1 teaspoon cornstarch 1 teaspoon Worcestershire sauce 1 teaspoon Dijon mustard 1/2 teaspoon dried thyme 4 skinless, boneless chicken breasts (about 1 pound)
Preparation Preheat oven to 400 F. Drain pineapple, reserving the juice. Combine juice with garlic, cornstarch, Worcestershire, mustard and thyme. Arrange chicken in an 8-inch square pan that has been sprayed with non-stick cooking spray. Pour juice mixture over chicken and bake uncovered for 20 minutes. Spoon juices from pan over chicken. Top each portion of chicken with a pineapple slice and return to the oven for 5 minutes. Yield: 4 servings.
