The way I always understood it, sour milk is regular milk which turns sour if you let it stand at room temperature for too long, or if it is simply past its expiration date. Very often, milk would sour after a day or two. Sometimes it is undesirable, and at those times milk is considered spoiled. But sometimes, you want to get that result and use sour milk for cooking, so you let it sour on purpose. But here, in America, due to preservatives in milk, it doesn't turn sour. It will not go bad after a day as organic milk would, but once it does go bad, it becomes bitter. So, if someone needs sour milk for a recipe, a lot of American recipes recommend mixing a little vinegar into milk.
