Cinnamon Rolls From Heaven
Serving Size : 15
2 pkg yeast
1 cup warm water -- 105-115 degrees
2/3 cup plus 1 tsp. sugar -- divided
1 cup warmed milk
2/3 cup butter
2 teaspoons salt
2 eggs slightly beaten
7 cups all-purpose flour -- 1 more C if needed
Filling:
1 cup melted butter
1 3/4 cups brown sugar -- divided
3 Tablespoons cinnamon
1/2 cup nuts or raisins-optional
Creamy Glaze:
2/3 cup melted butter
4 cups powdered sugar
2 teaspoons vanilla
4 Tablespoons hot water -- may need to 4 more
Dough:
In a cup combine yeast, warm water and 1 teaspoon sugar. Stir well and
set aside. In a large bowl mix warm milk, remaining 2/3 cup sugar, melted
butter, salt, and eggs. Blend well and add yeast mixture. Add half the flour and
beat
until smooth. Stir in enough of the remaining flour to make a slightly
stiff dough. (it will still be somewhat sticky). Turn out onto a well
floured board and knead for 10 minutes. Place in a well buttered glass or 
plastic
bowl and let rise in an oven turned to warm, turned off and containing a dish of
hot water. Let rise till doubled. Keep pan of water in oven. When doubled, punch
down and let rest for 5 minutes. Roll out on a floured board to a rectangle.
Filling:
Spread dough with 1/2 cup melted butter. Mix together 1 1/2 cups of
brown sugar and the cinnamon and sprinkle over dough. Sprinkle with nuts or
raisins if desired. Roll up jelly roll style, pinch edges to seal and slice
into desired size rolls.
Pan prep:
Coat bottom of 13X9" pan plus an 8" square pan (or pans to fit roll
size sliced) with remaining 1/2 cup butter and sprinkle with remaining 1/4
cup brown sugar. Place rolls in pan. Let raise in warm oven again till
doubled.(about 45 min).
Cover pans with foil and poke holes in foil with a fork. Keep pan of
hot water in oven and bake at 350 for 2o minutes. Uncover and bake till brown, 
about
5-10 minutes more. Remove from oven, cool slightly and flip over onto a cookie 
sheet
or waxed paper.
Glaze:
In a medium bowl add melted butter, powdered sugar and vanilla, adding
hot water until desired spreading consistency. Spread over warm rolls.  Enjoy.
